To be honest I think the way season 8 ended was somewhat satisfying to me and contrary to popular belief I loved watching "The Long Night" episode.
I read it was a scheduling issue
HBO has announced through the Game of Thrones twitter account that the series showrunners David Benioff and D.B. Weiss, executive producer Miguel Sapochnik and cast members Iain Glen and Nathalie Emmanuel will not be attending the Game of Thrones panel set to take place Friday, July 19th at 5:30 PM in Hall H of the San Diego Convention Center.
Still to appear at the panel will be Maisie Williams (Arya), Jacob Anderson (Grey Worm), Nikolaj Coster-Waldau (Jaime), Isaac Hempstead Wright (Bran), John Bradley (Sam), Liam Cunningham (Davos) and Conleth Hill (Varys).
No reason has been provided for the changes but many would believe that the cast and the showrunners didn't want to deal with the backlash that came from fans over the final season.

That wouldbe an interesting panel to attend.. so many angry GoT fans. Kind of weird they are doing a after the show is over celebration..
Will they apologize to us?
Will the celebration also be rushed and underwhelming?
I liked it. Flaws and all.
They're all past cast members now.
What's there to celebrate other than it's over?
